Nutritious root vegetables explored

The “Delicious and Nutritious Meals on a Shoestring: Root Vegetables” class taught by Penny Strand and Janet Rogers on Jan. 24 was very well received. In this first class Penny and Janet will be demonstrating a recipe for Glazed Roasted Root Vegetables as a main dish in a vegetarian menu or a side dish in a menu that includes a protein source. Here’s how some of the participants evaluated the experience:

“I got to try vegetables that I’ve never had before. They were wonderful! It was an excellent opportunity to try something new.”

“Penny and Janet were terrific teachers. I thoroughly enjoyed the class, especially learning about my fellow students, gaining new recipes, and eating healthy, delicious food.”

Penny and Janet are planning to teach a series of classes that will focus on healthy, seasonal foods that can be prepared easily and economically by busy cooks.
