
Oregon Food Bank recently delivered 10,800 pounds of California yams to Marion-Polk Food Share that currently are being distributed to food pantries and meal sites in Marion and Polk counties.
Yams are tubers that may be prepared by boiling, baking, frying or roasting. They deliver complex carbohydrates and soluble dietary fiber. They are good sources of B-complex vitamins, and antioxidant vitamin-C, vitamin-A and beta carotene. Yams also are rich sources of minerals like copper, calcium, potassium, iron, manganese and phosphorus.
Since MPFS makes every effort to deliver nutritious foods to charities in our 97-member hunger-relief network, we are happy to have this donation.
